Scott Vasko is a senior hospitality, food & beverage, and luxury retail operations executive with over 25 years of experience leading large-scale, multi-unit portfolios across global markets. During his tenure at STG, he held responsibility for operations across a multi-million-dollar international portfolio spanning multiple venues in the U.S. and Europe, overseeing a multi-million-dollar expansion budget while leading brick-and-mortar growth, AI-driven site selection, construction oversight, and design execution.
Scott's career reflects a consistent track record of building, scaling, and optimizing complex operations. As VP of Food & Beverage at Macy's Enterprise (Bloomingdale's), he led multiple concepts ranging from QSR through elevated dining, including activations with Michelin-starred and James Beard Award-winning chefs. A recognized authority in alcohol beverage program development and regulatory compliance, he has served as a signatory on hundreds of liquor licenses across multiple states and jurisdictions. At Hard Rock International, he served as Head of Global Company Operations. Earlier, he established American Flatbread of Virginia as CEO — a Zagat-rated, certified organic farm-to-table restaurant group.
In fine dining, Scott served at Palm Management Corporation, overseeing HR and training operations while facilitating new store openings for 16 locations as the brand expanded from 15 to 31.
Scott's operational foundation was built through hands-on leadership roles with Brinker International, Bloomin' Brands, and Legal Sea Foods, as well as serving as a franchise executive with Applebee's International. He also served as CHRO for two Washington, D.C.-based technology firms, bringing a people-first lens to high-growth environments.
As Managing Director at Root Learning/Accenture, Scott led strategic consulting engagements with Fortune 500 hospitality, restaurant, and airline clients including Marriott, Hilton, IHG, Star Alliance, Bloomin' Brands, Brinker International, and Starbucks — work focused on organizational transformation, strategic alignment, performance culture, and large-scale change management. Leveraging his MS in Organization Development from Johns Hopkins, he also served as the architect of corporate universities for three emerging companies, designing scalable learning and leadership development infrastructures from the ground up.
Scott holds an MS in Organization Development & Human Resource Management from Johns Hopkins University (Carey Business School). He brings deep expertise in P&L management at scale, organizational transformation, global venue openings, alcohol beverage licensing, enterprise technology implementation, third-party operator oversight, and organizational development.
As a member of the Gravity Talent Partners advisory council, Scott leverages his operational depth and executive network to support emerging and scaling brands in hospitality, food & beverage, entertainment, and adjacent sectors.
