The Assistant General Manager Role
An Assistant General Manager is the General Manager's second and the restaurant's operating leader on most shifts. The AGM carries much of what the GM does, scheduling, labor, hiring, training, inventory and shift results, while still leading the floor during peak service.
Day to day, the AGM runs shifts, coaches managers and staff, handles guest issues, and manages the controls that protect margin: labor, comps, cash, ordering and inventory. The role usually owns the schedule and the hiring pipeline, and runs the restaurant fully when the GM is off.
The AGM seat is where future General Managers learn the P&L. Strong AGMs understand how sales, labor and cost of goods move the bottom line and can explain the numbers to their teams. They also build benches deep enough to make the next GM promotion easy.
Candidates come from Assistant General Manager, Restaurant Manager or Bar Manager roles in high volume, full service or upscale casual restaurants.
