The Director of Food and Beverage Role

A Director of Food and Beverage runs every part of a property's dining operation: the main dining room, casual outlets, bars, catering and events. In a residential community or club the role has a second dimension, because the guests are members or residents who dine there many times a week and expect to be known.

Day to day, the Director sets menus and service standards with the Executive Chef, manages the F&B budget and labor, works with vendors, oversees the events calendar and is visible on the floor during service. The role hires, trains and schedules the service team and holds sanitation and food safety standards across the operation.

Relationship work is a large part of the job: listening to residents, responding to feedback, and shaping a dining program that feels personal and consistent. The Director usually reports to the General Manager or Executive Director and partners with the culinary, activities and sales teams.

Candidates come from F&B Director, Restaurant General Manager or Clubhouse Manager roles in hotels, private clubs, senior living communities and upscale restaurants.
